I just had to get Roy involved due to his BBQ knowledge, so it gives us a better insight on why each restaurant is incredibly good at BBQ!
The Black family has been actively serving the barbecue community for over three generations, originally making a name for themselves at the Black’s BBQ family-owned restaurant in Lockhart, Texas.
Valentina’s Tex Mex BBQ:
It has been a long-standing family tradition to BBQ at getting together and holidays, where every family member plays a role in creating the menu and preparing the made from scratch foods. Fresh hand-rolled flour tortillas, spicy salsa, avocado, cilantro, and lime are a family favorite when it comes to accompanying the BBQ. Miguel brings this spirit and tradition to Valentina’s.
Aaron Franklin is the host of BBQ with Franklin and owner and chief firestarter at Austin’s Franklin Barbecue, widely regarded as one of the most influential pitmasters in the U.S. He received the James Beard Foundation Award for Best Chef: Southwest in 2015. Franklin is the winner of every major barbecue award there is, including Texas Monthly’s coveted Best Barbecue Joint in Texas award and Bon Appétit’s Best Barbecue Joint in America.
Bobby Mueller, and while our ‘cue honors his legacy, la Barbecue’s recipes are uniquely our own. Bobby liked it fast, but we cook our brisket low ‘n’ slow over Texas post oak for 14 to 16 hours. It’ll melt in your mouth! Forget about hormones and other crap in your meat. We source our beef from a local ranch, where it’s lovingly grass-fed and completely free of hormones. Trust us—you’ll taste the difference. And sure, our meat doesn’t need sauce slathered on top, but our sweet sauce pairs perfectly with the salty beef.
