Mince Pie Recipe
100g Dried Cranberries
30g Virgin Coconut Oil
20g Crystallised Ginger
25g Coconut Sugar
1tsp mixed spice
½ tsp ground ginger
½ top cinnamon
1-2 tbsp gin
Zest three clementines into a bowl.
Peel all clementines, chop flesh and add to bowl.
Chopped walnuts into a medium sized pan over medium heat, 10 minutes, stir.
Add coconut oil, clementines, zest, spices, sugar, water and crystallised ginger to the saucepan, stir and simmer for 15 minutes.
Remove the cloves, add the cranberries, stir and leave with the lid on to simmer for 10 minutes.
Remove from the heat and stir through the gin.
Allow to cool.
